Originally Mezcal was produced by mixing mature agaves found in the field. Sola de Vega has always been known as the birthplace of “La Chilena” which is a type of regional music and for its Mezcal Tobalá, for which many travel from the state capital or other towns to obtain a bit of this distillate. For many, Tobalá is the jewel in the crown when it comes to mezcals and it is not only because of its magnificent physical beauty that resembles the bud of a rose or its complicated reproduction method that is solely through seeds, since which does not produce shoots, or finally the complicated harvesting that the Maestros Mezcaleros go through, since due to its condition as a Wild Agave it is only available in remote places. The experience it offers to all those who have had the fortune of trying it immediately changes their perception and it becomes a great mezcal in the full extent of the concept.

Our first product. In this case, what we seek is to present a Mezcal with extraordinary characteristics, beyond seeking artisanal production methods in areas of great Mezcal history, we enter the Sierra to search for a truly traditional production chain. In Sola de Vega, we discovered that the grinding was by hand and the Mezcal was distilled in Clay Pots, in addition to the fact that thanks to the conditions of the land, its distillate had the characteristic of being sweeter and spicier compared to that of other areas. inherit;">Here we explore the idea of “bottling directly from distillation” (from distilling to the bottle), and we find a pure product without any alcoholic richness adjustment. Which gives us a more robust mezcal in body that is perceived at the moment of tasting it.

On one of the visits we made to Sola de Vega, we had an unusual encounter in the agave fields with a plant that had almost identical characteristics to the Arroqueño, but presented some minimal differences that only a true connoisseur could appreciate. Don Antonio explained to us that being very close relatives, many people confused them at first glance with Maguey himself. He told us that although they come from the same family, once converted into mezcal they are different, since Coyote has more herbal notes and that is why it has become another of the brand's emblematic Mezcals. Like the Mexican, the Coyote is a lonely Mezcal that is not always available, but once you try it it becomes a favorite without a doubt.

For many, this Mezcal is somewhat unknown, coming from the Rhodacantha family, an agave similar in size to the Espadín was chosen to be able to offer a well-balanced trio. Having 2 Mezcals that were at opposite poles, it was time to find a middle point that could shorten the distance between them, in addition to offering a new proposal to our palates. This Maguey in particular is one of the ones we produce the least in Siete Misterios due to the high difficulty of obtaining it. To date, after 5 long years, we have not launched more than 1,000 bottles on the market, which is why we consider it our best kept secret.

Having the basis of our Mezcals, it was the ideal time to raise the range and offer another very high quality product obtained from one of the oldest and largest agaves that the field can offer us, we are talking about the Americana var. Oaxacensis, a large Agave that takes between 12 and 25 years to grow depending on the region in which it is located. This Mezcal is an icon of Siete Misterios, and over time it has become the favorite of our public, achieved thanks to the great combination that Agave offers us and the distillation in Clay Pots that give it unique characteristics and It helps to have a sensational balance in both the mouth and nose. This emblematic agave has helped us place the traditional distillation in Clay Pots in international markets such as the USA and Europe.

This is the first Mezcal we have launched distilled in a copper still and from a different region than the traditional Siete Misterios, Sola de Vega. After 3 years of seeing how Mezcal flooded the best places in Mexico and fell in love with the most demanding palates around the world, we saw that there was a gap where Mezcal could reach more people and diversify the way it was enjoyed; through cocktails. For this reason we decided to launch this well-balanced Mezcal, which had all the characteristics of a great Mezcal to be enjoyed alone, as well as having enough character and strength to be mixed behind the bars without ever losing its essence. With 44% alc/vol it has the perfect balance to be able to coexist in both worlds, in addition to its aromas and flavors being perceived in a sublime way both on the nose and in the mouth.

Having presented our first Mezcal and after continuing to rediscover the aromas and flavors of this distillate, it was time to continue the legacy that Sola de Vega offered us thanks to its diversity of Agaves. This agave was named for its great resemblance to a barrel once the leaves were cut and left ready to be cooked in the traditional underground conical oven. This Agave, unlike the others, has a kind of trunk, so it is It resembles a tree more than the Maguey Espadín. Unlike Espadín, this Maguey offers us more earthy and herbal tones which placed it in a completely opposite position from our first mezcal. This meant that we could have 2 different proposals.

With 7 different Mezcales under our belt, it was time to pay tribute and pay tribute to all the families who have opened the doors of their homes to us and given us their trust. A thank you to the Maestros Mezcaleros who have shared with us their experience and teachings that have been passed down from generation to generation, and of course to our beautiful Mexico that surprises us every day with all the culture that comes from its roots. With an annual production and a unique recipe in each edition, this mezcal is the celebration of a friendship between Mexicans, where we demonstrate that regardless of our origins, if we put our minds to it we can do wonderful things.
